Almond ROCA Almond Cookies

Ingredients
5 tablespoons margarine or butter
1/2 tablespoon sugar
1 tablespoon egg whites
1/4 tsp almond extract
1 cup all purpose flour
1/8 tsp baking soda
Pinch of cream of tartar
1/2 cup sliced almonds
1/2 cup ground Almond ROCA
Directions
Preheat oven to 350 degrees
In a medium bowl cream margarine and sugar, beating until light and fluffy. Stir in egg white and almond extract
Gradually add flour, baking soda, and cream of tartar.
Once thoroughly mixed, form dough into 1/2 inch balls and place onto nonstick cookie sheet at least 2 inches apart
Dip a glass in flour and gently flatten each cookie
Top each cookie with a sprinkle of Almond ROCA and a few almond slices
Bake for 8-10 minutes until lightly browned. Cool on pan for 3 minutes and then transfer to wire racks to cool completely
